Amaranth and nuts smoothie is an easy and healthy breakfast smoothie or say mid evening snack. Amaranth is a whole grain naturally gluten free and loaded with proteins, lysin – which is an important amino acid, iron, calcium and fibers. Healthy isn’t it ? And also it is GLUTEN-FREE & VEGAN ! And not to forget Amaranth is used as one of the ingredients while preparing meals during fast. So here is one more addition in your fasting recipe.
The best thing about the smoothies is that they are easy to tailor in the way you like it. And this smoothie is fantastic with almond milk, so thats what we will use here. Also we have added dates for mild sweetness to our smoothie.
Our favorite is almond milk, but to be honest it works so well with any milk in it. So you can use any dairy milk, oats milk etc, the choice is all yours.
To make it power packed smoothie I have added some of our favorite nuts and seeds. So this recipe has a nice serving of proteins, calcium and fibers along with antioxidants and minerals.
Amaranth also known as Rajgira is the tiniest grain and is easily available in grocery store. You can buy the Amaranth grains and if you are lucky to get the popped up Amaranth nothing like it.
How To Pop Your Own Amaranth?
Add one tablespoon of amaranth to a deep pan or pot with a lid. Heat on the stove over low heat for a few minutes. Shake the pan a little to help prevent the amaranth from burning. The kernels will pop similar to popcorn, so they should look white and fluffy when popped.
Since this recipe use the cooked amaranth so lets see,
How To Cook Amaranth;
1/2 cup amaranth
1 1/2 cups water
Combine amaranth and water, bring to boil, cover, reduce heat and simmer 5 minutes. Cook until all water is absorbed and the consistency is similar to a pudding…thick.If you don’t like mushy oatmeal, give amaranth a try. and I am sure you will love to add it in your smoothies, shakes and ice creams , yes !! I tried recently in my chocolate ice-cream. And the popped grains can be used to make salads, energy bars and some savory and sweets.(You can also use popped amaranth seed to make this smoothie, just add while blending the smoothie)
Now when we have read about the benefits of amaranth and how to cook your own amaranth, lets move on to the recipe to make this power packed smoothie.
Preparation Time – 10 Minutes
Cooking Time – 5 Minutes
Serves – 2
2 no. – Banana Sliced and Frozen
1/2 Cup – Cooked Amaranth
3 Cups – Unsweetened Almond milk or any milk
5-6 Whole – Pitted Dates
1/4 Teaspoon – Flex Seed
1/4 Teaspoon – Sunflower Seeds
7-8 no. – Almonds, Chopped
Handful of dried berries – Cranberry, blueberry Raisins
2 Teaspoon – Chia seeds, Bloomed
1 Tablespoon – Sliced Pistachios (For Garnishing)
How to go about it –
- In your blender, combine banana, cooked amaranth, unsweetened almond milk, dates, seeds, almonds and berries, thereafter blend until completely smoothen.
- Pour into the glasses of your choice and top it with bloomed chia seeds.
- Garnish with sliced pistachios.
- Serve chilled.
- You can replace dates with honey.
- This smoothie can be enjoyed as a smoothie bowl. Once ready pour in the bowl, let it sit for a minute and garnish it with the choice of your fruits, nuts and seeds.
- Frozen banana gives thick creamy texture to smoothie.
