Gobhi Paratha


Stuffed parathas are all time favorite for everyone in the family and can be enjoyed anytime for breakfast, lunch and dinner as well. Here is a detailed recipe of gobhi paratha from one of the cooking blog; authentic food delights by Sushma Mallya. She is a wonderful person and share lovely recipes and this is one among them that I have bookmarked. Here I have made a slight change where I have used only wheat flour for making dough though recipe says (1:1 maida and wheat flour).Do try these parathas I am sure you will love it.



For the dough

  • 1 cup wheat flour
  • 2 teaspoon oil
  • ΒΌ cup milk
  • 1 teaspoon sugar
  • salt to taste

For the stuffing

  • 2 cups grated cauliflower
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ginger
  • 1 teaspoon crushed coriander seeds
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon amchur powder
  • 1/4 teaspoon Ajwain
  • 1 tablespoon mint leaves
  • 2 tablespoon finely chopped coriander leaves
  • Salt to taste
  • 2 teaspoon oil /ghee
  • Oil to shallow fry

How to go about it:

For the stuffing

  1. Heat oil in the pan and add ghee.
  2. Add crushed coriander seeds and ajwain and fry for 1-2 minutes, then add grated ginger, grated cauliflower, turmeric powder, red chilli powder, amchur powder, salt to taste, coriander and mint leaves and fry for 2 minutes.
  3. Mix it well and switch off the gas. Stuffing is ready, keep it aside.

For the dough

1 Take a bowl, add all the ingredients listed under dough with enough water to make soft dough and keep aside.

For the paratha

  1. Heat tawa, now take one portion of the dough, flatten it and add portion of stuffing in the center. Gather the edges and roll out into a thick paratha (can make thin parathas as well)
  2. On the heated tawa add 1 teaspoon of oil and fry the paratha both the sides till golden brown.
  3. Repeat the same procedure to make rest of the parathas.
  4. Serve it with mint coriander chutney or fresh curd and pickles.


  • Can use maida: wheat flour – 50:50 .Here I have used only wheat flour.
  • Always make the dough before preparing the stuffing and cover it with the damp cloth or cling foil.This is make soft parathas.
